Halbai is a popular sweet dish of Karnataka. It is a kind of rice halwa or rice cake prepared with rice, coconut, and jaggery. It is very easy to prepare, soft, tasty and liked by everyone. It can be prepared in all festivals, functions and as well whenever you want to eat.
INGREDIENTS:
Red raw rice/ dosa rice/normal rice - 1/2 cup
Grated coconut - 1/2 cup
Jaggery(powdered) - 3/4 cup
Ghee - 5 to 6 tsp
Cardamom powder - 1 tsp
METHOD:
1. Rinse and soak the rice for 2 hours.
2. Drain the water and grind it along with grated coconut. Use required water and grind until fine batter. The batter should be of thin flowing consistency like neer dosa batter.
3. Heat a thick bottom kadai, add jaggery and 1 cup water. Once the jaggery gets completely dissolves lower the flame.
4. Now add the rice-coconut paste to the boiling jaggery water. Keep on stirring the mixture ensuring no lumps are formed.
5. cook the batter until you get a thick mass by stirring continuously. When it becomes thick add ghee and cardamom powder. Continue cooking or mixing under medium or low flame by stirring continuously.
6. From now onwards stirring will be little difficult but do not give up. After some time you can see the halbai will start leaving the pan. At this stage it is done. switch off the stove.
7. Take a plate, grease ghee over it . Pour the hot halbai onto the greased plate.
8. Take a spoon greased with ghee and flatten the halbai.
9. Once it is warm cut it into big pieces and serve.
10. Halbai can be refrigerated and stored for 3 days.
