CHAKKAKURU/ JACKFRUIT SEEDS THORAN

Chakka Kuru (Jack Fruit seeds) thoran is a yummy preparation. The taste of jackfruit seeds is really yummy when it is prepared as a thoran. Jackfruit is a very popular fruit in Kerala and this Chakkakuru thoran is an easy to prepare thoran recipe and it goes well with hot rice. 





INGREDIENTS:

Jackfruit seeds (Chakka Kuru) - 30 
Water - 2 cup
Turmeric powder - 1/2 tsp
Salt to taste

Grated coconut - 1/4 cup

Cumin seeds- 1/2 tsp

Pearl onion - 5

Oil - 2 tsp

Mustard seeds - 1 tsp

Curry leaves

Red chili - 1
Green chili - 2


METHOD:

1. Peel the seeds and remove the brown color layer slightly and cut the seeds into long pieces. 

2. Grind/ crush coconut, jeera, and green chili as a coarse paste (Thoran consistency).

3. Cook chakkakuru along with turmeric powder, salt and water in a vessel. 

4. When it is cooked, remove it from the flame.

5. Heat oil in a pan and splutter mustard seeds. Add the dried red chilli and curry leaves and pearl onion. Fry it.

6. Add the crushed coconut mixture and mix well.

7. Add the cooked jackfruit seeds/ chakkakuru.

8. Cook for a minute or two till combined.

9. Tasty Chakkakuru thoran is ready.

CARROT-BEANS THORAN

Thoran is a coconut-based vegetable Keralite dish. This common dish is usually eaten with steamed rice. This is a common menu item for a sadhya. You can use almost any vegetable to make thoran. There is another name for thoran which is Upperi. You can use almost any vegetable to make thoran. Carrot beans thoran is a thoran recipe made with a combination of carrots and beans.









INGREDIENTS:

Carrots - 1/2 cup
Beans - 1/2 cup
Turmeric powder - 1/4 tsp
Urad dal - 1/4 tsp
Mustard seeds - 1/2 tsp
Salt to taste
curry leaves
Coconut oil - 1 tbsp
Grated coconut - 1/4 cup
Red chili powder - 1 tsp
Coriander powder - 1/2 tsp
Cumin powder - 1/2 tsp



METHOD:

1. Wash the carrots and the beans well. Chop the carrots and beans finely. Keep them in a bowl.

2. In a pan, heat oil, add mustard seeds. Allow them to splutter.

3. Once it splutters add urad dal and curry leaves.

4. Now add the chopped carrots and beans and salt mix well. Now add the turmeric powder sauté for some time.

5. Add little water. Cover the pan with a lid. Allow it to cook. Check in between and stir it once or twice so that the vegetables don't burn.

6. Once the beans and carrots are cooked, add the grated coconut, cumin powder and coriander powder. Cover it with the lid and leave for 2 min.

7. Serve this with rice.
