MODAKAM

The main prasadh made for ganesha festival/ Ganesh chaturthi is modak/modakam. These dumplings are prepared and relished with great enthusiasm all across the country and assume great significance during the birth anniversary of Lord Ganesha. Every state in India has its own version, many sweet and savory varieties can be prepared as kozhukatta /Modakam. Sweet kozhukkata/Modakam are steamed rice dumplings with coconut and jaggery stuffing. 








INGREDIENTS:

Raw rice - 1 cup
Water as required
Salt - pinch
Ghee - 2 tsp
Grated coconut - 1 cup
Jaggery - 1/2 to 3/4 cup
Cardamom powder - 1tsp


METHOD:

Preparing Outer layer:

1. Soak raw rice in water for 3 hours.

2. Grind this in a mixie into a very nice batter.

3. Let the batter be in the consistency of neer dosa batter.

4. In a pan add ghee, rice batter and pinch of salt.

5. Mix well using a ladle without any lumps.

6. When the water evaporates, the batter comes to a dough consistency. 

7. Switch off the flame and keep the dough covered with a wet cloth.


8. Once it is warm you can start making the modakams.

Preparing Poornam:

9. Heat a pan, add the grated coconut and jaggery.

10. Stir for about five minutes. Add cardamom powder and ghee. Mix well.

11. Cook for another five minutes and keep aside.


Making Modakams:

12. For making modakams, take the dough, add little ghee to the dough and knead well.

13. Make the dough into lemon sized balls and cover it with a wet cloth.


14. Take a dough ball. With you fingers make a small cup out of it and place the poornam in that.

15. Close this and make it into a modakam shape.

16. Do the same for the rest of the dough.

17. Place the modakams in an idly tattu and steam it for 5 to 7 minutes in medium flame.

18. Modakams are ready for neivedhyam.

GANESH CHATURTHI / VINAYAKA CHATURTHI RECIPES

Ganesh Chaturthi also known as Vinayaka Chaturthi is one of the important Hindu festivals celebrated throughout India with a great devotion. This day is celebrated as the birthday of Lord Ganesh, the elephant-headed son of Lord Shiva and Goddess Parvati. 
                 


Lord Ganesh is the symbol of wisdom, prosperity and good fortune. The Ganeshotsav festivities begin on Ganesh Chaturthi and end after 10 days on Anant Chaturdashi, also known as the day of Ganesh Visarjan. On this day, devotees immerse idol of Lord Ganesha in a water body close by.

There are two different versions about Ganesha's birth. One has it that Mother Parvati created Lord Ganesh using turmeric and set him to guard her while she finishes her bath. Lord Shiva came at that time, but Lord Ganesh didn’t know him and stop him from entering. Lord Shiva become more furious and severed the Ganesha’s head. After a fight between Lord Shiva and Parvati, Shiva promised Lord Ganesh will live again. Devas who went in search of a Ganesha’s head could manage only the head of an elephant. Lord Shiva fixed the elephant’s head on the child and brought him back. 


The other legend has it that Ganesha was created by Shiva and Parvati on request of the Devas, to be a vighnakartaa (obstacle-creator) in the path of rakshasas (demonic beings), and a vighnahartaa (obstacle-averter) to help the Devas.



On that day, we make special traditional dishes like Vella kozhukattai (modakam) using coconut and jaggery filling, uppu kozhukattai with lentil filling and ammini kozhukattai. Celebrate Ganesh Chaturti by preparing these delicious traditional dishes......

ELA ADA

Ada or Ela Ada is an Indian sweet and traditional Kerala delicacy, consisting of rice parcels encased in a dough made of rice flour with sweet fillings, steamed in banana leaf and served as an evening snack or as part of breakfast. It can be seen even in parts of Tamil Nadu as well. Grated coconut and rice flour are the two main ingredients. It is usually prepared on Onam. In this recipe, I used chakka varatti/ jackfruit preserve for filling, instead of jaggery.

INGREDIENTS:

Raw rice - 2 cup
Ghee
Salt
Chakka varati - 1 cup
Grated coconut - 1 cup
Cardamom powder - 1 tsp
Plantain leaves

METHOD:

Prepare the dough:

       Soak the rice for 2 hours. Grind the rice to a fine paste and the consistency should not be very runny or very thick. Add ghee and pinch of salt to the batter.

Prepare the filling:

       Mix the chakka varati, cardamom powder, ghee and grated coconut and heat it in a low flame for 5 mins.

Prepare the banana leaves:

           Wipe the leaves with a moist cloth. Then place one leaf at a time on the gas flame for about, flipping and turning the leaf so that the leaf is slightly wilted. This step helps in making the folding easy.

Prepare the Ada:

            Take the plantain leaves. Pour a spoonful of the prepared rice batter and spread like a small dosa. Should not be very thin. Place 2 to 3 tbsp of jackfruit filling in the center and fold the banana leaf from the opposite side. Fold both the sides and the open side as well so as to make a closed parcel. Steam this in a steamer for 30 mins.

UNNIAPPAM

Unniappam is a small round snack made from rice, jaggery, banana, roasted coconut pieces, roasted sesame seeds, ghee and cardamom powder fried in oil. Variation of this organic and spongy fried batter using jackfruit preserves instead of banana is common from the late 2000s. It is a popular snack in Kerala. In Malayalam, unni means small and appam means rice cake.



INGREDIENTS:

Raw rice - 2 cup
Jaggery - 1 & 1/4 cup
Water - 3/4 cup
Banana - 2
Wheat flour - 1 tsp (optional)
Ghee 2 tsp
Coconut bits - 1/8 cup
Sesame seeds - 2 tsp
Cardamom - 5


METHOD:

1. Soak raw rice for 2 hours. Melt jaggery with water and make a thick syrup.

2. Drain water and grind the rice along with banana, wheat flour and rava to a smooth paste/ batter using the jaggery solution.

3. Keep this batter for fermentation about 8 hours.

4. Fry the coconut bits in ghee until it becomes light brown in color.

5. Now add the fried coconut bits, sesame seeds, and cardamom powder to the batter and mix well.

6. Place the appa kaara (cast iron mold pan) /Unniyappam pan on the stove and pour coconut oil into each round(only fill half). Along with it place a cheenachatti/pan on another stove and pour coconut oil.

7. When oil gets hot, simmer the flame and pour half ladlefuls of batter into each round of the appa kaara. Flip when one side is cooked.

8. Transfer to the other pan(cheenachatti) and fry well.


9. Drain from oil when golden brown.
