AVIYAL

Avial is a dish which is believed to have been originated from South India and is common in Kerala and Udupi cuisine. It is a thick mixture of vegetables and coconut, seasoned with coconut oil and curry leaves. Avial is considered an essential part of the Sadya, the Keralite vegetarian feast.

It is supposed to have been invented by Bhima (one of the Pandava brothers) during their exile. According to the legend, when Ballav (Bhima's name during this time) assumed his duties as the cook in the kitchen of Virata, he did not know how to cook. One of the first things he did was to chop up many different vegetables, boil them together and top the dish with grated coconut. There are mythological variations. Bheema is said to have prepared Avial, when there were unexpected guests for King Virata and he needed to serve meals for them. There were no sufficient vegetables to cook any single recipe for a side dish, so Bheema used whatever available vegetables to make a new dish, which came to be known as Avial.



INGREDIENTS:

Raw Banana /Pachakaya - 1
Yam /Chena - 1/2 cup,
Drumstick /Muringakkaya - 1
Long beans/ payer - 5 to 6 
Snake gourd /Padavalanga - 1
Carrot - 1 
Brinjal - 2
Cucumber - 1 (small)
Turmeric powder - 1/2 tsp
Grated Coconut - 1 cup
Green chilly - 5
Cumin seeds - 1/2 tsp
Curd - 3 to 4 tbsp
Curry leaves
Coconut oil - 1 tbsp
Salt to taste

METHOD:


1. Peel and cut vegetables lengthwise.

2. Grind coconut, green chilly and cumin seeds into a coarsely paste without adding water.

3. In a heavy bottom pan/uruli heat 2 tbsp of coconut oil.

4. Add all veg and sauté for 10 minutes in medium flame.

5. Add red chili powder, turmeric powder and salt along with some curry leaves.

6. Mix well.

7. Close the pan with banana leaf/plate. Lower the flame and cook until done stir occasionally.

8. Add curd and mix well.

9. Now add coconut mix in our cooked vegetables and slowly mix until the coconut and vegetables saute well. 

10. Close it for few minutes in medium flame.

11. Finally add curry leaves and pour coconut oil and turn off the flame.

12. Allow it to sit for few minutes before serving.

KAPPA PUZHUKU

This is yet another famous classic combo dish from Kerala, India kappa puzhukku-kappa vevichathu-tapioca. For most of the Keralities /Malayalis this humble dish is very familiar and favorite, for me it is yet another dish makes me feel super nostalgic. Kappa Puzhukku-Kappa Vevichathu is boiled and mashed Tapioca seasoned with spice mixture and ground coconut served with rice.


INGREDIENTS:

Tapioca - 1
Turmeric powder - 1/4 tsp
Salt to taste
Grated coconut - 1/2 cup
Red chilli - 4 to 5
Cumin seeds - 1/2 tsp
Coconut oil



METHOD:

1. Clean the tapioca by removing scales. Chop them roughly and boil the tapioca with some turmeric and salt.
2. Drain the tapioca. Meanwhile grind the coconut, red chilies and cumin in a grinder.
3. Add this paste to the tapioca and cook for 15 minutes.
4. Switch off the flame and pour some coconut oil to the puzhuku.
Serve with rice!!!!!

BRINJAL CURRY

This gravy brinjal curry is made to be eaten with rice rather than roti. Many make this curry with different variations and I have preferred to keep it simple. 

DISH



INGREDIENTS:

Brinjal - 5
Onion - 1
Coriander seeds - 2 tsp
Urad dal -1/2 tsp
Red chilli - 4 to 5
Asafeotida
Curry leaves
Grated coconut - 3/4 cup
Tamarind - small lemon sized
Jaggery - small piece
Turmeric powder
Salt


METHOD:

1. Heat oil in a pan and add mustard seeds, urad dal, red chillies and curry leaves.

2. Add sliced onion and fry it till brown.

3. Add thin slices of brinjal and fry till it cook.

4. In another pan heat oil, coriander seeds, urad dal, red chillies, asafeotida, curry leaves and fry it.

5. Add grated coconut, fry it and grind it to a fine paste with tamarind, jaggery, turmeric powder.

6. Add the grounded paste to the cooked brinjal along with salt and water.

7. Cook it for 15 mins in low medium flame.

Serve hot with rice or roti!!!!!

PINEAPPLE MADURA PACHADI

Pineapple Pachadi- Madhura Pachadi is a sweet side dish made with pineapple, banana, grapes, and coconut. This is always served as a side dish during marriages and Kerala festivals like Onam, Vishu etc. This is one of the signature dishes of Kerala, South India.



INGREDIENTS:

Pineapple chopped - 1 1/2 cup 
Nentrapazham chopped - 1/2 cup
Turmeric powder - 1/4 tsp
Red chili powder - 1tsp
Salt to taste
Cashews - 10
Grapes - 15
Sugar - 1/2 tsp 
Yogurt - 2 tbsp

For Grinding:
Grated coconut - 3/4 cup
Jeera - 1 tsp
Green chili - 3

For Seasoning:
Coconut oil - 1 tbsp
Mustard seeds - 1 tsp
Red chilli - 2
Curry leaves

METHOD:


1. In a pan/manchatti, cook finely chopped pineapple and chopped banana (nentrapazham) by adding turmeric powder, red chili powder, green chili and salt with water, when it cooked add cashews and grapes.

2. Close and  cook together, until it becomes tender and soft and all water is absorbed.

3. Meanwhile, grind grated coconut, jeera and green chilies to a fine paste.

4. Add this grounded coconut paste to the cooked fruits and cook on low medium flame till it starts to boils. when it starts to boil, add sugar and mix well.

5. Add yogurt; adjust the salt and sugar and mix together. 

6. Take a small pan, heat the coconut oil; and make the seasoning using mustard seeds, red chili and curry leaves. Add this seasoning to the curry.

7. Close and keep it for 10 mins before serving, so that the gravy absorbs all the flavors of fruits.

Serve with rice!!!!

KALAN KERALA CURRY

Kalan -Kaalan is a more popular traditional Keralite dish made of yogurt, coconut, and vegetable tubers like yam and plantain. It is served as part of the sadya, the traditional Kerala feast. It is distinct from all the curd/yogurt based gravies and it is very easy to make and is an ultimate comfort food with some rice and any spicy vegetable stir fry on the side.

INGREDIENTS:

Chenna/elephant yam - 1cup chopped
Nentrapazham - 1/2 cup chopped
Grated coconut - 3/4 cup
Cumin seeds - 1 tsp
Green chili - 3
Turmeric powder - 1/2 tsp
Pepper powder - 1tsp
Green chili - 2
Curry leaves
Fenugreek powder - 1/2 tsp
Yogurt - 1/2 cup
Ghee - 1 tsp
For seasoning:
Coconut oil - 1 tsp
Mustard seeds - 1 tsp
Urad dal - 1/2 tsp
Fenugreek seeds - 1/4 tsp
Red chili - 2
Curry leaves

METHOD:


1. Wash and cut the vegetables into square pieces.

2. Grind the grated coconut, cumin seeds, green chilies to a thick paste and keep it aside.

3.Cook the vegetables with turmeric powder, salt and pepper powder, green chili and curry leaves.

4. Add the grounded paste and fenugreek powder.

5. Add yogurt and boil for few mins in low flame.

6. In a frying pan, heat the oil and add mustard seeds, urad, fenugreek seeds, red chili, curry leaves.

7. Pour the seasoning over the kalan and add ghee. Cover the dish for 10-15 mins. Let the flavor set.

8. Serve with rice.
