PINEAPPLE MADURA PACHADI

Pineapple Pachadi- Madhura Pachadi is a sweet side dish made with pineapple, banana, grapes, and coconut. This is always served as a side dish during marriages and Kerala festivals like Onam, Vishu etc. This is one of the signature dishes of Kerala, South India.



INGREDIENTS:

Pineapple chopped - 1 1/2 cup 
Nentrapazham chopped - 1/2 cup
Turmeric powder - 1/4 tsp
Red chili powder - 1tsp
Salt to taste
Cashews - 10
Grapes - 15
Sugar - 1/2 tsp 
Yogurt - 2 tbsp

For Grinding:
Grated coconut - 3/4 cup
Jeera - 1 tsp
Green chili - 3

For Seasoning:
Coconut oil - 1 tbsp
Mustard seeds - 1 tsp
Red chilli - 2
Curry leaves

METHOD:


1. In a pan/manchatti, cook finely chopped pineapple and chopped banana (nentrapazham) by adding turmeric powder, red chili powder, green chili and salt with water, when it cooked add cashews and grapes.

2. Close and  cook together, until it becomes tender and soft and all water is absorbed.

3. Meanwhile, grind grated coconut, jeera and green chilies to a fine paste.

4. Add this grounded coconut paste to the cooked fruits and cook on low medium flame till it starts to boils. when it starts to boil, add sugar and mix well.

5. Add yogurt; adjust the salt and sugar and mix together. 

6. Take a small pan, heat the coconut oil; and make the seasoning using mustard seeds, red chili and curry leaves. Add this seasoning to the curry.

7. Close and keep it for 10 mins before serving, so that the gravy absorbs all the flavors of fruits.

Serve with rice!!!!
