POORI MASALA

Poori masala recipe – Poori masala is one of the popular combinations in hotels/restaurants. Potato masala makes a great combination for poori and dosa too. As the deep-fried pooris are served along with potato masala which happens to be rich in carb too, this combination makes a heavy meal.





INGREDIENTS:

For poori:
Wheat flour - 1 cup
Salt to taste
Rava - 1 tbsp (optional)
Water as required
For Masala:
Potato - 2 
Onion -1 medium
Ginger - 1-inch piece
Green chili - 4
Turmeric powder - 1/2 tsp
Salt to taste
Oil – 1 tbsp
Mustard seeds – 1 tsp
Channa Dal – 1/2 tsp
Urad Dal - 1/2 tsp
Curry leaves – few


METHOD:

Preparing poori:

1. Take wheat flour, salt and rava (optional) in a bowl.

2. Add water slowly and knead to a stiff dough.

3. Rest the dough for 10 to 15 mins.

4. Divide the dough into equal portions.

5. Roll the dough into a small circular shaped disc.

6. Drop poori in hot oil, press on top until puffy, flip over and cook.

7. Serve with poori masala.

Preparing Masala:



1. Pressure cook potatoes with water until soft. Cool it, peel off the skin and mash it up roughly. Keep aside.

2. Heat oil in a pan, add mustard seeds, urad dal, channa dal allow it to crackle then add curry leaves, ginger, and green chilies fry for a minute. Then add onion saute till slightly browned.

3. Add turmeric powder and saute well.

4. Add mashed potatoes along with salt. Mix well.

5. Add required water and allow it to boil.

6. Garnish with coriander leaves.

7. Your potato masala is ready now. You can pair with pooris.
