VENDAKKA/OKRA KICHADI

Kichadi is an essential side dish for Kerala Sadya. Pachadi and Kichadi is a side dish made from different vegetables like ginger, cucumber, pineapple, lady’s finger or bitter gourd. Here I am sharing the recipe of vendakka/okra kichadi. It’s an easy to prepare and a yummy side dish which goes well with rice.




INGREDIENTS:

Vendakka/Okra - 12 to 15
Grated Coconut - 1/3 cup
Green chili - 3
Mustard seeds - 1/2 tsp
Curd - 1/2 cup
For seasoning:
Coconut oil - 1 tsp
Mustard seeds - 1 tsp
Red chili - 1
Curry leaves

METHOD:

1. Wash the okra and pat dry. Cut each okra into 1/4 inch thick pieces.

2. Deep fry or shallow fry okra in oil. I usually prefer deep fry method.

3. In a blender, add grated coconut, mustard seeds and green chilies.

4. Grind it to a fine paste. Add water as per your consistency.

5. Transfer the grounded paste to a bowl. 

6. Add salt and curd. Mix well.

7. In another pan, heat oil add mustard seeds and red chili.

8. When mustard seeds splutter, add curry leaves.

9. Pour this to the kichadi.

10. Add fried okra just before serving. 

11. Serve with hot rice.
