INSTANT MANGO PICKLE

Pickles are a delicacy that is eaten in almost all parts of the world. Their spicy and tangy taste is liked by all and hence it is such a famous dish. This is the  famous instant cut mango pickle from Kerala  sadhya recipe.  The recipe is a must on the corner of the “sadhya ela ” along with a quick lemon pickle and “puliinji”. 





INGREDIENTS:

Raw mango - 1
Turmeric powder - 1/4 tsp
Salt to taste
Red chili - 6 to 7
Fenugreek seeds - 3/4 tbsp
Asafeotida - small piece
Coconut oil - 2 tsp
Mustard seeds - 1 tsp
Curry leaves


METHOD:

1. Dry roast red chili, fenugreek seeds and asafetida.

2. Grind this to a fine powder.

3. Wash and pat dry the mango.

4. Cut the mango into small pieces.

5. Transfer this to a bowl.

6. Add salt, grounded mix and turmeric powder. 

7. Mix well with your hands.

8. Add 1 tsp coconut oil and saute.

9. Heat oil in a kadai, splutter mustard seeds and curry leaves.

10. Add prepared mango to this and turn off the flame.

11. Mix well.

12. Transfer it to bharani or glass bottle.
