KICHADI

A simple and spicy healthy rice and lentil (green gram or moong bean) based dish ideally served for lunch and dinner. It is a spicy variation of simple khichdi. Usually khichdi is served with yogurt, pickle and papdam.






INGREDIENTS:

Ghee - 1 tbsp
Bay leaf - 1
Cardamom - 1
Cinnamon - 1 inch
Clove - 2
Cumin seeds - 1/2 tsp
Asafoetida - pinch
Onion - 1
Green chilli - 1
Peas - 2 tbsp
Ginger garlic paste - 1 tsp
Tomato - 1
Carrot - 1/4 cup
Capsicum - 1 tbsp
Turmeric powder - 1/4 tsp
Red chilli powder - 1/2 tsp
Coriander leaves
Garam masala powder - 1/2 tsp
Salt to taste
Rice - 1/2 cup
Moong dal - 1/2 cup
Water - 3 cup


METHOD:

1. In a pressure cooker heat 1 tbsp ghee and add bay leaf, cardamom, cinnamon, cloves, cumin and hing.

2. Add onion, green chilli and ginger garlic paste.

3. Add tomato till they turn soft and mushy.

4. Add vegetables like peas, carrot and capsicum. Saute for a minute.

5. Now add turmeric, red chili powder, garam masala and salt. Saute on low flame.

6. Add rice and moong dal. Saute for a minute on low flame.

7. Pour water and coriander leaves. Mix well.

8. Pressure cook for 5 whistles on medium flame.

9. Serve masala khichadi with curd and pickle.
