KERALA STYLE VEGETABLE STEW

Vegetable stew is a global dish made from a mixture of vegetables like Carrot, potatoes, beans etc which goes well with Appam, Idiyappam or even Idly. These ingredients can include any combination of vegetables. The usage of coconut milk as an ingredient gives it a typical Kerala flavor.





INGREDIENTS:

Potato - 2 Carrot - 1 Beans - 5 Onion - 1 Ginger - small piece Green chilli - 4 Curry leaves Coconut oil - 1tbsp Water - 1/4cup Thin Coconut Milk - 1cup Thick Coconut milk - 3/4 cup Salt

METHOD:

1. Wash and chop all the vegetables into medium-sized pieces.

2. In a pressure cooker, add all the vegetables along with salt, onion slices and 1/4 cup of water and cook until 1 whistle.

3. When the pressure settles down, open the cooker add thin coconut milk along with green chilly, curry leaves and chopped ginger. Stir well.


4. Allow it to boil and when it becomes very thick switch off the flame.


5. Add few curry leaves, ¼ cup thick coconut milk, and mix well.


6. Serve Kerala style vegetable stew with Idiyappam or Appam.
